The Zwirnerei is an industrial loft boasting an exceptional atmosphere. Its stylishly furnished interior can accommodate up to 40 people. There, the grapes are processed gently. This involves avoiding mash pumps, using spontaneous fermentation without added cultured yeasts, and minimizing intervention in the winemaking process, for example, by reducing filtration and sulfur additions to a minimum.
